Serves 6

15 mL (1 tbsp) lemon juice
15 mL (1 tbsp) instant coffee powder
60 mL (1/4 cup) margarine, melted
1 mL (1/4 tsp) onion powder
2 mL (1/2 tsp) salt
6 U.S. Farm-Raised Catfish fillets, 180 to 250 g (6 to 8 oz) each

Combine all ingredients except catfish fillets. Reserve 1/4 of mixture to brush on cooked fillets.

Brush mixture generously onto fillets.

Broil 3 to 4 inches from the grill for 10 minutes. Turn and brush fish again with sauce. Broil 10 minutes longer or until fish flakes easily.

Brush the catfish fillets with the coffee butter again and serve.
