Serves 4

A healthy twist on the classic Moo Shu wrap. Easy to make and fun to eat!

8Â 8-inch (20 cm) flour tortillas
1 tbsp (15 mL) plus 1 tsp (5 mL) sesame oil, divided
1 lb (500g) U.S. Farm-Raised Catfish, cut into 1/2-inch (1 cm) strips
3 cups (750 mL) packaged shredded cabbage with carrots (coleslaw mix)
1/2 cup (125 mL) hoisin sauce, divided

Wrap tortillas in foil. Heat in 350ºF (180ºC) oven for 8 to 10 minutes to soften.

Meanwhile, prepare filling. Heat 1 tablespoon (15 mL) of the sesame oil in nonstick skillet over medium high heat. Cook U.S. Farm-Raised Catfish strips, stirring occasionally until opaque, about 5 minutes. Stir in cabbage and cook, covered, about 4 minutes or until cabbage is crisp-tender. Stir in 1/4 cup (50 mL) hoisin sauce and the 1 teaspoon of remaining sesame oil. Cook, stirring, until heated through.

Spoon about 1/2 cup (125 mL) filling onto each tortilla just below the centre. Fold bottom edge up and over filling. Fold opposite sides in, just until they meet. Roll up from bottom. Serve with a dollop of remaining hoisin sauce.
