Serves 6
2/3 cup (160 mL) pineapple/orange juice
1 tbsp (15 mL) brown sugar
2 tsp (10 mL) olive oil
1 lb (500 g) U.S. Farm-Raised Catfish filets, cut into chunks
1 1/2 cups (375 mL) fresh cubed pineapple
1 1/2 cups (375 mL) red grapes or peeled orange sections or diced carrot
In a shallow dish whisk juice with brown sugar and oil. Add catfish and stir to coat. Marinate in the refrigerator for about 1 hour.
Preheat the barbecue. Remove catfish from marinade. Discard marinade. Thread catfish, pineapple and grapes or oranges or carrots on skewers.
Grill, basting occasionally, until fish flakes easily with fork, about 5 minutes.
