1 garlic clove, cut in half1 whole egg, lightly beaten, or 2 egg whites1/4 cup (50 mL) milk
1/4 cup (50 mL) fresh bread crumbs
1/4 cup (50 mL) freshly grated Parmesan cheese
1 tbsp (15 mL) chopped fresh oregano, OR
1 tsp (5 mL) dried oregano
1/2 tsp (2 mL) salt (optional)
1/4 tsp (1 mL) freshly ground black pepper
1 lb (500 g) fresh U.S. Farm-Raised Catfish fillets
2 tbsp (30 mL) olive oil
Preheat oven to 400ºF (200ºC). Lightly grease sheet pan. Rub cut side of garlic on pan.
Mix egg or egg whites and milk in shallow dish. Mix bread crumbs, Parmesan cheese, oregano, salt, if using, and pepper in another shallow dish or piece of wax paper.
Dip catfish fillets in egg mixture, then roll in Parmesan mixture until completely coated.
Arrange fillets on prepared pan and drizzle with oil.
Bake for 20 minutes or until fish flakes easily when tested with fork.
